Egg "Mac" To Go
  • Overnight Oats, Kath Eats.  I use Steel Cut Oats for a chewy texture.
  • Plain Yogurt, Cottage Cheese, Fruit/Berries, Nuts, Maple Syrup and Vanilla
  • Egg "Mac" Muffin.  Fried egg and cheese on an English Muffin.  This can be made the night before and wrapped in Parchment paper for a grab and go breakfast.
  • PB, Banana & Strawberry Wrap, Food.com
  • Whole Wheat Pancakes, Allrecipes.com - Make a big batch on the weekend and freeze.  They can be thawed and reheated in the toaster.

Salad Dressings & Spice Mixes

(Printout to store in your spice cupboard)
  • Ranch Dip Spice Blend, 100 Days of Real Food
  • Mexican Spice Blend (Chatelaine) - Stir 3 tbsp (45 mL) chili powder with 2 tsp (10 mL) each ground cumin, black pepper, dried oregano leaves, 1 tsp (5 mL) each salt, garlic powder, onion powder, paprika and 1/4 tsp (1 mL) cayenne pepper (optional). Great as burger seasoning or as a rub for pork, chicken or steak. Store in a sealed jar or plastic bag. Keeps well at least 2 months. Makes about 1/3 cup (75 mL)
  • Caesar Dressing – mix well 1 cup of mayonnaise,  2 Tbsp Parmesan Cheese, 1 Tbsp Lemon juice, 1 clove garlic (minced) and just a little milk.  The milk is to thin it out and give it the consistency you want, so base amount on preference.
  • Steak Marinade (from Crazy Plates cookbook) -
    • 1/4 cup soya sauce
    • 3 Tbsp steak sauce
    • 2 Tbsp each lime juice and packed brown sugar
    • 1 Tbsp grated gingerroot
    • 2 cloves garlic, minced
    • 1 tsp sesame oil
    • 1/4 tsp pepper

Snacks

  • Apple Nachos - slices of apple, shredded cheese, sprinkle of cinnamon.  Microwave until cheese melts
  • Apple Chips, Taste Love and Nourish
  • Warm Apple Sauce and Cinnamon -- chop apples and boil until very soft.  Mash with a fork and sprinkle with cinnamon.  A 0 point (Weight Watchers) alternative to apple pie!
  • Ricotta Peanut Butter Spread - Ricotta Cheese, Peanut Butter (or Almond Butter or Almond Pulp) and Maple Syrup.  Serve with toast or use as dip for fruit.
  • Quinoa, Apricot, and Nut Clusters, Martha Stewart -- great on thier own or crumbled in cereal or yogurt.
  • Whole Wheat Cheddar Crackers, Weelicious - I use my Kitchen Aid instead of a food processor and it works fine!
  • Whole Wheat Tea Biscuits, 100 Days of Real Food
  • Almond Milk, Oh She Glows
  • Almonds & Square of Lindt Milk Chocolate with Sea Salt
  • Popcorn
    • Butter and Nutritional Yeast Flakes
